Mumbai style Tomato Rice!












Tomatoes are the best of all vegetables! they enhance any dish with their vibrant red colour and that unique tangy taste. It is a one meal dish but is so full of flavours , that it will become a top favourite.


Every home has a different style of making the Tomato rice, my style is adopted from the most popular chef Harpal Singh. I have made changes that i like and i love it this way, i do not like to add paneer  to the tomato rice and i also like to cook the frozen peas with the rice and i prefer to use freshly cooked rice. Few of such changes and we are in for a yummy tomato rice. 




You can make the tomato rice with leftover rice from night, then the rice grains are nice and separated, But i love to use the long grain, it just enhances the virtual appeal of the dish so much! I think because of this bias i have towards the length of the rice grain, i eat more than i normally do if it the Basmati.  i don't really have a favourite brand. It is more about the water ratio and the way you cook.


What do you need to make tomato rice? 

  • Long grain rice
  • Green Peas
  • Tomatoes
  • Capsicum
  • Onion
  • Ginger and garlic paste
  • Slat
  • Oil


How to make the Tomato Rice?


Step 1:  Cook the rice and green peas together. I do this to save on the time it takes to blanch my frozen peas.  Keep it aside.




Step 2: Is to fry your vegetables. The texture i am looking for always when i make this tomato rice is a nice crunch from the capsicum, the tangy taste from the tomatoes,  the silky texture from the onions and the spice from the Pav bhaji masala. 



Let us begin, in a big wide wok, add a little oil  add a big scoop of ginger and garlic paste, fry till the raw smell goes away and you can smell the beginning of something nice! add the onions followed by salt and fry till they turn translucent; Now the add the tomatoes and fry till they soften.





 Let us add the dry spices chili powder  and the Pav Bhaji Masala, mix all this really well and then finally add the capsicum and fry them. I like the crunch of the Capsicum so i will not fry for too long. 




Step 3: Add this mixture to the rice and mix gently to ensure the grains do not break, serve it hot and have a glass of masala buttermilk to complete the meal.
