Gajar ka halwa




If there is one sweet dish everyone! absolutely everyone makes during Winters it is the "Gajar ka Halwa". Everyone who sports the seasons first just grabs them irrespective of the price and welcomes the winter with the hot Gajrela with some nuts!! This is a must make dessert in winters! 







Gajar ka halwa is made with fresh Gajar.. this is the darker variety from the carrot family they are bit more sweeter than the orange carrots. Although Orange Carrots are more popular these red beauties. You must try this Khova version that make its much more richer and gives each soon a nice and deep bite!! 



Traditionally Gajar ka halwa is had just with some nuts but you can become creative and serve it with some Ice cream the simple Vanilla it must be!! I have seen a few recipes with some flavor additions but i love it the classic way. Sugar, khova, milk and nuts! 



What do you need to make Gajar ka Halwa?

  • Gajar - 1kg
  • Milk - enough to soak up the grated gajar
  • khova - 100 grms 
  • Nuts (Cashew, Almonds and Unsalted pistachios) 
  • Sugar - 1.5 cups

How to make the Gajar ka Halwa?


Step 1: Grate the Gajar and keep it aside. Try and grate it in long strips, the tip is to grate only one side start at the bottom go up lift the gajar and start again at the bottom. That way you get long strips and not tint bits. 




Step 2:  Boil you milk and let it simmer and thicken. Add the Grated Carrots and keep cooking till the carrots soak up all the milk and it all comes together. 





Step 3: Grate the fresh Khova and keep aside. 



Step 4: Add the Khova to the Gajar and milk pudding we have simmering on the other side and mix it well. 




Step 5: Add sugar and generous amounts of nuts fried in ghee. Mix it well, let this cook for 3 to 4 minutes. Eat it hot or eat it cold or pair the hot Halwa with a cold vanilla ice cream. It will be a hit!
