Spicy Mango Pickle Aavakaya








The only good thing about summers is Mangoes!! Toady's recipe is one of my favourites and i know that it is loved by millions of people! A simple mixture of spices can produce the most amazing pickle. The name Aavakaya is what first comes to your mind when you think of Andhra.. There are so many types of pickles but this one stands out in the pickle crowd! I think that Aavakaya is the king of mango pickles! 




Mango pickle stays fresh for 1 year and can be stored up to 1 .5 years but we make it every summer because there is fresh mango's and  the taste of fresh mangoes is just amazing and it is a family event to do the process! There is only one way to eat the Aavakaya, mix generous amounts of the pickle with hot steaming rice and some ghee. this brings out the true taste of Andhra Aavakaya. 


The tangy mango's when mixed with the spicy chilly powder and mustard powder taste out of the world. Of course there is a little help from salt and oil! 


What do we need to make Spicy tangy Mango pickle
  • Raw and tangy mangoes - 20 medium sized
  • Chilly powder - 1 kg
  • Mustard Powder - 1 kg 
  • Salt - 1 kg 
  • Gingerly Oil - 1.5 to 2  litres


How to make the Spicy Mango Pickle 

Step 1: Hunt for nice and tangy Mangoes, if the Mangoes are not Tangy enough the Pickle will not taste good. Most of the vendors who sell pickle Mangoes will help you cut them up into pieces. They have to be chopped as below, with a bit of the hard shell. 


Step 2:  Try to remove the cover over this hard shell  and wipe each of this piece slowly, making sure there is no trace of water. This step is very important as even a drop of water can spoil the pickle. 



Step 3:  Take a big container that can accommodate all the ingredients and still will have space for you to mix them. Wash and wipe it clean, again make sure there is no trace of wetness. Add the measured quantities of Salt, Chilly powder and the mustard powder. Mix these dry ingredients well. 



Step 4: Slowly add the Mango pieces and oil, we usually add half and half and keep mixing to make sure all the ingredients mix well. Now set this aside for 3 days. 


Note: make sure you mix them with a clean and dry hand.








Day 1: Immediately after you mix the pickle  you might not be able to judge it's taste. Day 3 is the correct day to taste it, as this is the time it takes to marinate with all the ingredients. 

Day 3: Your Pickle will ooze out oil and will be like this, you can adjust the salt and spice levels the third day and done! You can adjust salt and spice levels on this day. Move it to a sir tight jar and store.
