Maagaya - Sun dried Mango Pickle





Maagaya is a very popular Pickle made with super Sour Mangoes. Those beautiful green ones. We usually make this pickle together with the Aavakaya but this pickle takes a couple of days but it is all worth it!! trust me it is!! 

The tough part of making this pickle is making it ooze water and then drying it! any bit of water would ruin the pickle. So try and follow the process really well and thank me later! 




What do you need to make the Maagaya? 


  • Mangoes about 2 kgs
  • salt to taste ( we used about 800 grams)
  • Chilly powder - 250 grams
  • Gingerly oil - 1.5 liters (use more if the pickle looks to be thick) 
  • Fenugreek seeds - 250 grams
  • Dry red chilies - about 10- 15
  • Mustard seeds - 100 grams (you can use less of these if you don't like that crunch) 
  • Turmeric powder  - 50 grams 
  • Asafoetida - 2 spoons


How to make the Maagaya?


Step 1: Step one is to wash wipe and peal the mangoes, although it sounds easy, it is a tough job and one of the most important things. The nice green mangoes sometimes have a liquid oozing out of them, make sure you wash them and wipe them really well. 





Step 2: Cut the mangoes  into long julienne like shown in the picture below.




Step 3:  Take a big vessel that can accommodate all the ingredients, first the mango goes in, follow it by salt and turmeric. Mix it really well and leave it for almost 2 days. This mixture will ooze out water and we have to keep this aside, we have to take the mango out of this and let it dry. Not too dry , not too juicy, just nice! 




Step 4: Let us dry fry some Fenugreek seeds and grind this to a nice smooth powder. dry fry powder it and run it through a strainer making sure the powder is really fine. 













Step 5: Add the freshly made fenugreek powder to the liquid that oozed out and to that add chilli powder. 





Step 6: Add the mango slices and mix it up. 



Step 7:  Heat the oil till it smokes and some Asafotida, mustard seeds and red chillies wait till it comes down to room temperature. Add the oil to the mangoes marinating in the masala...! mix all of it and adjust the slat levels if you think there is a need. Done.. lip smacking magaya is ready!
