Rabri - Rich, Creamy, and Easy RABRI


















Rabri is probably one of the most popular and loved dishes across India. It is an awesome dish in itself; imagine what it can do as a part of any other dessert... is easy to guess! 


The Rabri is made of milk that is cooked on the lowest possible flame and then it is sweetened loaded with nuts and chilled. It has to be served in a "Mitti ka bartan" (a mud bowl). The earthen bowl just adds some charm to the simple Rabri. 

I am making the rabri only with 3 ingredients! Main ingredient is milk, the sweetness comes from the Milkmaid and then the crunch from the nuts. while you can have it hot , i love it when it is chilled! I am making it the traditional way of slow cooking it, there are lots of instant Rabri recipes and i am holding on the thought of trying it out. because somethings are best the way they are. 


Also for this recipe i am mentioning quantities, i love it like this. not too sweet but super creamy and full of layers of the thick milk. 

What do you need to make the Rabri?


  • Milk 1 Ltr
  • Milkmaid 1/2 tin
  • Chopped nuts (As many as you like!) 
  • Saffron  6-7 strands. 

How to make the Rich and creamy Rabri? 


Step 1:  The process of cooking your milk, take a thick bottom pan and wait for the first boil, move the cream to a side and keep stirring and stirring.



Step 2: After you notice that the milk has thickened a bit, add the saffron and the Milkmaid and keep stirring.


Step 3: Add the nuts after the milk becomes half of it's quantity and mix well. move it to another vessel and let it cool down. put it in the fridge (not freezer) and let it settle for at least 4 to 5 hours before serving. Your Rabri  layered with cream and nuts is ready!
