Healthy and Cheesy triangles - Roti Pockets













Cheesey Wheat pockets are like the indianised cheesy pockets. These are super easy to make, not deep fried and healthy too, I am sharing the recipe and process that i used, the beauty of this recipe is you can use any stuffing you like. I was craving for some pizza and did not have enough time to make it, so the base is replaced by roti and so is the top! 





These cheesy stuffed triangles come together really quickly and you must eat them HOT! I used very few vegetables in these , you can use vegetables of your choice. 




We made fresh Roti for these cheesy triangles , you can happily use up leftover roti. If you are using leftover roti, make sure the stuffing is well cooked and the rotis you use do not burn. 


What do we need to make the healthy Cheesy Triangles? 

  • Wheat dough 
  • Pizza sauce
  • Red capsicum 
  • Yellow Capsicum 
  • Onion 
  • Tomato
  • Salt
  • Olive oil 


How to make the Cheesy Triangles ? 

Step 1: Knead the Chapati dough and leave it to rest for 15- 20 minutes. 

Step 2: Let us make the stuffing, In a pan add some olive oil wait for it to heat up and add the chopped onion add a bit of salt and fry till they turn translucent, add the tomatoes and cook for 3-4 minutes; time to add the Yellow and red capsicum. i like my peppers nice and crispy so i do not intend to cook them for longer. 


Step 3: Now make roundels of the dough and half cook the chapatis and keep them aside. Cook the Side that goes inside almost fully; Simply because we will not be able to flip it. 





Step 4: Spread generous amounts of the Pizza Sauce on this add the mixture and now spread generous generous amounts of cheese! top it up with the other half cooked roti and let the outer sides nicely brown and crisp up. Remember to flip and cook on both sides. 







Step 5: Cut the roti into triangles and serve hot!
