Spicy Crisps for Tea Time - Masala Chakkalu











One thing that almost all of us can relate to is Chai time / Tea time. Be it at office or at home this is one thing that you do not want to miss. Call it an addiction or a habit, clearly tea loyalists will not mind. If the hot masala chai is paired with some savoury snack it is a match made in heaven.

This snack is referred to by many names, it is referred to as "Uppu Tunakalu " in Telangala region, it is called as "Chekkalu" in Andhra Pradesh. For all the non Telugu speaking audience it is  "Rice crisps". 





I remember the very traditional way these were made in my dad's ancestral village. The dough is still made the same way but the rolling of roundels was originally made on the back of a vessel with round shape. Interestingly this trick is followed to make yummy Vada at home. 



I have a feeling this will become one of my top 5 recipes, it is easy to make and  these crisps can be stored for about one week to 10 days in an airtight box. It is altogether a different issue that they will be finished in lesser time! Unless you have made HUGE batches. I suggest make them in smaller quantities so the fresh taste will always be there. If the crisps become a little hard, all you have to do is microwave the crisps for 30 seconds and they will be as fresh and as crispy as crispy can get. 




The only time consuming thing in this is the soaking of the rice; you just have to  wash it thoroughly and let it dry inside the house till it becomes fully dry. This may take a day or 2 depending on the climate at your location.



What do we need to make Spicy Crisps?
  • Rice 
  • Onions
  • Fresh Coriander 
  • Curry leafs
  • Groundnuts
  • Fried Bengal gram
  • Ghee
  • Salt
  • Sesame seeds
  • Cumin seeds
  • Ajwain / Carrom seeds. 
  • Green chillies 
  • Hot Water 
  • Oil for deep fry 



How to make the Spicy Crisps? 

Step 1: Wash the rice thoroughly and let it dry in a shaded area of your house. This is time consuming but very important, if the rice does not dry properly the Crisps will attract fungus and cannot be stored.Get this rice grounded at a flour mill near your place. If you do not have a flour mill close by, grind it at home and siff through till you get fine powder. 



Step 2: Fry and grind the Groundnuts and bengal gram to a coarse powder. Make sure that the powder is coarse and you can see a few bits in it. This will add a nice crunch to the Crisps. 





Step 4: Make a paste of Fresh Onions and Green chillies and keep aside. Make a fine paste of Coriander and Curry leaves. 

Onion and Green chilli Mixture: 
This adds the spice eliment to the crisps, add as many green chillies and onions as you want, If you like the crisps Spicy add more of these .


Coriander and Curry Leaf Mixture: These 2 bring an awesome flavor to the crisps. 
 

Step 5: First we will add the dry ingredients to the flour. Sesame seeds, Cumin seeds, Carom seeds, Salt to taste.




Step 6: Add the Coriander paste and the onion paste we prepared to the dough and start kneading it. Use hot water to make the dough to get a sticky consistency.  The consistency plays a very important role, so do this step carefully and keep kneading the dough till all ingredients mix well and you feel the sticky consistency. 






Step 7: Take a plastic sheet and apply oil all over it. We are greasing it so the roundels can be easily moved to the oil for deep frying. Put a tiny lump of the dough over it and gently pat it with your fingers and make it a roundel. Drop it into hot oil and fry it till golden brown.  





That is it, our super yummy Masala Crisps / Uppu Tunakalu /Chekkalu are ready!
