Coriander Puffed Rice Upma






Puffed rice / Murmura is one of those things that is loved by one and all. There are so many things we can make with murmura that i think i can dedicate a whole new blog to it! Murmura is used in many parts of india and is a super popular street food! 



A few of my favourite dishes with Murmura are the Jhaal Muri from Bengal, Bhel puri from anywhere in India, Puffed rice crackers the sweet version from Singapore and Susheela from Telangana! i don't know if it is really from Telangana but my dad taught me this recipe and its name and he is as Telangana as it can get. The name Susheela is funny because it is a very common female name and sounds a little funny for food. 



Susheela is basically puffed rice tossed in vegetables of choice and a bit of Groundnut / fried Bengal gram powder. The version i am showing you is a coriander Puffed rice upma. I am huge fan of coriander and love how it changes everything about the dish even if you use it just as a garnish. 





What do you need to make the Coriander Puffed rice? 


  • Puffed rice 
  • Lots of Coriander 
  • Green chillies 
  • Salt
  • Roasted groundnut powder 
  • Roasted Bengal gram  
  • water 
  • Oil 
  • Mustard seeds 
  • Bengal gram 
  • Cumin Seeds

How to make the Coriander Puffed rice? 

Step 1: Fry and make a coarse powder, note that the powder should be so coarse that you actually see bits of ground nut. This will add an amazing crunch to our sushila!

Step 2: Chop the coriander, green chillies and whip it a bit and keep it aside. 

Step 3: Lets make the tadka, since I am not adding any vegetables , my Upma is gonna be ready in no time. In a wide pan, add the Bengal gram and fry for a bit, add the mustard seeds and cumin seeds and fry all this nicely. 

Step 4: Is to bring everything together, dip the Puffed rice in water and leave it for not more than a minute , add it to the tadka and mix all the tadka into the puffed rice. Add the Coriander and green chilli mixture , a pinch of salt and mix this well. Let this cook for 2-3 minutes on low flame. 

Step 5: Add the groundnut powder and the fried Bengal gram mix this and serve hot! Note that we must add the Groundnut powder and Bengal gram in the end for the crunch element.
