Punjabi Chole - One pot method - The easiest!














Chole is a chickpea dish that is just awesome! There are many many recipes to make this awesome dish. I am going to show you the ONE POT method. I am a foodie but not the hard working types! and so i am looking for easy ways to make the same dish.  


I love shortcuts but not so much that i miss some important element. So there are a few tricks that help you make chole without soaking the chickpea. But i would not do it, although in the end you can make the dish it is different. So please soak the chickpea overnight. 




Chole is best consumed 6-7 hours after the dish is prepared; This allows the chickpeas to soak all the spices. It tastes awesome even otherwise. 

What do you need to make Chole? 


  • Soaked chickpea 
  • Tomatoes 
  • Ginger and garlic paste (fresh) 
  • Onions 
  • Cumin 
  • Whole gram masala
  • Chole Masala 
  • Turmeric
  • Chilli powder  
  • Ghee 
  • Carom seeds / Ajwain 
  • Green chillies  (optional) 



How to make the One Pot Chole?


Step 1:  Chop the onions and tomatoes really fine and grind the ginger and garlic to a smooth paste. 




Step 2: Put a pressure pan on the stove, add oil to it. Once the oil is hot and some cumin seeds and wait till they splutter. Add the Garlic and Ginger paste. fry till the raw taste goes off and add the whole garam masala and fry for 2-3 minutes.



Step 3: To the above masala add the turmeric and Chili powder. Add the onions followed by salt and fry. Add the tomatoes and fry for another 4-5 minutes and add the tomatoes. Fry till oil separates and add the soaked chickpeas and pour water and cook for 3 whistles on high and 2 on low flame. 





You can add the green chillies if you wish to, these are totally optional and you can skip it. 


Step 4: Take out half a cup of the cooked chickpeas and mash it nicely then add it back to your cooked pot. 





Step 5: Is the master stroke! the Carom seeds and ginger seasoning. Cut the ginger into thin long juliennes. Now heat ghee ./ clarified butter in a small pan and add fry the ginger juliennes, now add the Carom seeds  and pour this over the chole. 









Step by step pictorial recipe of Punjabi Chole:

Get a few things we need ready, chop the tomatoes and onions, make a fine paste of ginger and garlic. 



Add cumin seeds to a pressure pan 





Add ginger garlic paste and fry till the raw smell goes off




Add the Whole garam masala 

Add the dry masala  powders, turmeric and chilli powder and fry for not more than half a minute. 




add the chopped onions and a salt and mix all this well




Add the Chole masala and mix this well.




Add the soaked chickpeas and green chilli (if you are adding green chilli). Pour enough water to cover all the chickpeas. Cook for 3 whistles on high flame and 2 on low flame. 








In another small pan, add ghee and once hot add ginger juliennes,and Carom seeds

Serve with some hot Baturas
