Noodles , the name is enough to make start drooling. Be it Maggi , Hakka noodles or this amazing Singapore noodles. I love the crunch of vegetables in this dish and the light feel of the rice noodles that come with a dash of soy sauce and then there is the presence of pepper, giving the dish a unique spice quotient. And my favourite Garlic!! loads of garlic! makes this dish a special one. You can see many garlic recipes on my blog that showcases my love for Garlic.
The original Singapore style noodles has shrimp , pork and other meats. I am a hard core vegetarian but love the noodles. I just did not use meat. You can add vegetables of your choice, no cabbage please. Not all Chinese dishes have cabbage and chili sauce and Chinese food is more than just Manchurian and fried rice.
Chinese food is no doubt tasty, but it is first a visual delight because of all the colours they use and the way they cut the vegetables. It is indeed true that we eat with our eyes and nose before we actually eat the dish. This explains why most people love Chinese food.
One of the most important ingredient of this noodle dish is teh curry powder. I used the Curry powder my awesome friend Sarosh got for me. You can get the Ayam brand's Curry powder at Nature's Basket.
What do you need to make the Singapore Style Noodles ?
- Rice vermicelli / Rice noodle
- Onion
- Carrot
- Red Capsicum
- Baby corn
- Beans
- Spring Onion Greens.
- Garlic
- Soy sauce
- Pepper powder
- Salt
- Curry powder
How to make the Singapore noodles:
Step 1: Boil water in a huge vessel. Soak your rice vermicelli in it covered for 10 -15 minutes, strain the hot water; Run the noodles under cold water and Keep aside.
Note: Adding a spoon of oil to this will help the noodles stay nice and non sticky.
Step 2: In another smaller bowl and generous amounts of chopped Garlic, 2 spoons of soy sauce, 2 spoons of water, a little sugar and a pinch of salt, half a spoon of pepper and let it soak for 5-10 minutes.
Note : If you like a peppery taste in your noodles add more pepper.
Step 3: Take a little oil in a big wok and fry the vegetables one by one. First we will begin by frying the onions. Remember to add a little salt when you fry the onions always. This helps the onions fry nicely and not brown. We will now add the rest of the vegetables thinly sliced Carrots, Beans and Baby corn.
Stir fry these vegetables for 3-4 minutes on high flame, add the Capsicum add a big spoon of curry powder and toss well and take this out in a plate.
Step 4: In the same wok add 2 -3 spoons of oil, once it is smoking hot, lower the flame and add the noodle followed by 2 spoons of curry powder and the soy garlic mix. Toss all of this till it blends well with each other.
Step 5: Last step to bring all of it together; Add the Vegetables we kept aside and the spring onion greens and mix them well. Serve hot.
Step by step Pictorial recipe :
Boil water, switch off the gas and soak the Vermicelli in boiling water for 10-15 minutes. If your vermicelli is thin, soak for lesser time.
In a bowl and generous amounts of Garlic about hand full, i love the garlic in my noodles so i added a little more :) add 2 spoons of soy sauce, 2 spoons of water, a little sugar and a pinch of salt, half a spoon of pepper and let it soak / rest for 5-10 minutes.
Slice all the vegetables long and thin.
In a big wok take some oil and fry onions till they are translucent. Remember to add a pinch of salt.
Add the Beans , Corn and Carrots
Add a big spoon of curry powder and then finally the capsicum , i used red, you can use any colour.
Empty the wok and Keep the stir fried vegetables aside.
Add oil in the same non stick pan, wait till it smokes and add the noodles we kept for straining, add 2 spoons of curry powder and the Soy garlic mix.
Mix well and add the stir fried vegetables and the Spring onion greens.
Mix well
Toss and mix on high flame.
serve hot.
