What is the first thing you remember when i say Hyderabad? must be Biriyani? or could be Charminar? now if i add a clause and say "think something sweet!" Then you can think of 2 dishes Shahi Tukda / Double ka Meetha or the Qubani ka meetha. I am going to share a step by step recipe of how to make the double ka meetha.
This easy to prepare dish is extremely popular in Hyderabad and is served at almost all weddings, is also prepared on many special occasions and festivals. of course you can make it for no reason at all! :)
The reason i made it is special is my blog! i was batting at 99 posts and was waiting for that special Post that will help me reach a milestone. My 100th post!! So my reason to prepare and celebrate is my blog what is yours ? BTW "Just want to eat the Shahi Tukda" is also a reason.

The special thank you is because, this is my 100th post and i have been thinking from the time i entered my nervous 90's "What should be the 100th special milestone post?"; I asked a couple of friends what they think it should be. My best friend Yogita mentioned that i should make something Hyderabadi and i already knew i wanted to make something sweet!
The 2 things that came to my mind when i combined Hyderabadi + Sweet = "Double Ka Meetha" and "Qubani Ka Meetha". For whatever reasons the "Double Ka Meetha" / "Shahi Tukda" won and it turned out really yummy.
Shahi meaning Royal and tukda meaning a piece, with it's origins rooted to the Mughlai cuisine, it is a super favourate in Hyderabad and now also popular around the word.
Presenting to you, Step by step recipe of Double Ka Meetha or the Shahi Tukda. This recipe does not use condensed milk. If you are short on time you can use a tn of condensed milk also. I have added a twist of my own to this, keep reading to know what i did.
What do you need to make the Shahi Tukda?
- Bread Slices
- Ghee (clarified Butter)
- Milk
- Saffron Strands (kesar)
- Nuts of choice chopped. (generous amounts)
- Sugar
- Water
How to make the Shahi Tukda?
The Shahi Tukda is made in 3 different big steps. I will explain each step clearly.
- The first step is "Making of the Rabri "
- The second step is making of the "Sugar Syrup"
- The 3rd step is a combination of what we are going to do with bread and the nuts.
Making of the Rabri:
Rabri is a very popular sweet dish in itself. It is added to many Indian sweets and Yeah it can be just had independently, imagine what it can do to any dish that it is added to!!
Step 1: Take a little milk in a small bowl add 5-6 saffron strands to it and leave it aside.
Step 2: In another heavy bottom vessel start with boiling the milk (on low flame), do not leave the milk unattended till you switch off the gas. Keep stirring at all times. I call this 'cooking the milk' because we will cook it till the milk changes its texture and becomes thick and we have to be continuously mixing.
You will not miss the milk becoming thick part, but just in case you want to be sure of the time to switch off the gas and stop cooking the milk. It is when the milk becomes half of the original quantity or even lesser.
Once the milk is half of it is quantity add the milk with Saffron strands and mix well. Cook for about 2-3 minutes and you can switch off and let this cool down.
Making the one string Sugar Syrup:
The ratio i am using for this Syrup is 1:1, but you can make it as sweet or as less sweet as you want.
Step 1: The only one step add sugar and water in a pan and boil till the syrup becomes thick and you see the one string consistency.
Bread and Nuts:
Bread:
Step 1: Cut the corners of the bread and then cut them into triangles or squares.
Step 2: Add some ghee to a pan, and fry the bread triangles. Keep a close watch and fry them till they are nice and crisp. You can actually deep fry these triangles if you do not mind the calories. ;) I fried the bread in generous amounts of ghee.
Nuts:
I used the nuts in 2 different ways.
Powdered nuts: Grind all the Nuts and keep the powder aside.
Chopped nuts: We will use this as garnish.
Serving the Shahi Tukda:
Arrange your slices in a deep edged plate, sprinkle the powdered nuts over the slices generously and then pour raabri all over it, garnish with chopped nuts.
