To talk about the benefits of Spinach we will need an entire blog.  For now it is about the Million ways you can cook it.  Palak Paneer, Aloo palak , Spinach pasta, the list goes on. I am going to share a dry lentil Palak dish that goes well with hot steamed rice and also with any Indian breads.

This recipe used to be a regular when we were kids and it was sour favourite! I remember how my aunt would make a non spicy version for the kids and we would eat it up like salad.

What do you need to make the Dry Spinach?

  • Spinach chopped
  • Split green gram - moong daal, pesara pappu
  • Green chillies
  • Mustard Seeds
  • Turmeric powder
  • Curry leaves.
  • Slat
  • Oil

How to make the Dry Spinach Curry?

Step 1: Wash and dry the spinach properly and keep aside. You can strain the excess water after washing and dry the spinach on a muslin cloth or a paper towel.

Step 2: Soak the Moong daal for 30 minutes; strain and keep aside.

Step 3: In a big wok add oil and once it is hot enough add the mustard seeds and wait for them to splutter, add the green chillies, curry leaves,  turmeric powder and the soaked and strained moong daal, fry for 4-5 minutes add salt and finally add the spinach.

Mix all this well, cover and cook for 2-3 minutes and then open cook for another 3 minutes. That is it!  serve it with some hot phulkas or with some steamed rice.
