Red Chilli Pickle / Korivi Khaaram












It's winter time and the time you'll see these beautiful green and red chillies and people are making some amazing stuff with them. I have one recipe that is beyond any description!


The brilliant red color of the chillies is so pleasing that taking about it also makes me want to eat it. OK, wait! before you think i am some super human that can handle spice like a kids play. NO i cannot! In this case it's like " More Bark than Bite!" They look Fiery red but are not as spicy! what brilliant colors nature has! You have to stop at some point and say WOW! 

It is a super simple achar , make the base mixture and store it in an airtight container. Whenever you want to eat it, just take teh required portion and add tadka to it. Serve it with some hot steamed rice with generous amounts of ghee. 

This special pickle is also known as "Pandu Mirapakaya Pachachadi" which means its the Pickle made with ripe chilli fruit. It is also known as "Korivi Kharam" which refers to the super spiciness.  

What do we need to make the Red chilli Pickle?


  • Red chillies 500 grams
  • Salt To taste 
  • Tamarind 50 grams. 


How to make the Red Chilli Pickle Base? 

Step 1: Break the stem of the chillies , wash and dry them. Do not use any shortcuts for drying the chillies, let them sit in the sun or under the fan or wipe each one with a cloth, whichever way you want. Just make sure they (every single one) are fully dry before moving to the next step. 




Step 2: Cut up the Chillies and grind them coarsely and keep aside. Do it in batches to avoid the chillies becoming a paste. Now add salt and mix it well. Make a well in the middle and add the tamarind (seedless) cover it with rest of the chillies and leave it for 48 hours in an airtight container. 



Note: I did not have the time and chance to grind it on a stone Pistol, this pickle tastes best when you grind it with hand. 








Step 3: After 3 days take the mixture out and grind it again. This step is to ensure the tamarind mixes evenly with the rest of the mixture. That is it!!!! our Red chilli base is all ready! at this point you can check the salt levels and adjust it a per your taste. 





The Tadka part is simple, just take out the amount you require and keep it aside. In a pan add little oil, once the oil is hot add mustard seeds, once they start to splutter add curry leaves and hing.; fry for a bit, nowwww pour this over the red chilli paste you kept aside. That is it Special Red chilli pickle from Andhra is ready!
