Gajar Ka Halwa with an interesting twist





Carrot is one of the most "Chef friendly"  vegetables . It adds an amazing eye appeal to any dish it is included in. the nice bright orange does not fade away easily, unless you put extra effort and boil it beyond requirement. Carrots add a nice crunch to the dish and can adopt the dish like it's own!

Be it a sweet dish , a pickle , a simple curry,  mixed rice (one pot meal).. or a salad! Imagine any of these dishes and the first thing that comes to your mind is the bright and beautiful ORANGE and tasty Carrots!

I am not a big fan of sweet dishes, but this one halwa that our cook Mr Suresh makes is super special. He does not add sugar to it, yes!! no sugar he adds milkmade and kalakand to get the nice sweet flavor and that grainy texture. 

All of us know how beneficial carrots are for our eyes, may be because of the many benefits it is popular as baby food as well.  You can give carrot sticks to your teething baby, it will help sooth their gums and is good for health, but they have to be watched.

This particular dish i am sharing is interesting for many reasons. Post festival days always leave you with loads of sweets, if you have leftover kalakand, do try this and i will be happy to see your feedback. 

What do we need to make the carrot halwa?
  • Carrots
  • Milk
  • Milkmaid (i used Amul)
  • Kalakand (milk based sweet )
  • Dry fruits of your choice

How to make Carrot Halwa?

Step 1: Is to grate the Carrots, do not grind them please. Grate it and then when it cooks in milk that taste is awesome! cook the grated carrots in milk. Add double quantity of milk and leave the carrots to cook on low flame! let the carrots soak all the milk. 







Step 2: Once you see that the milk has reduced to half. Add Milkmaid (Condensed Milk) and mix it well. Let this cook for 3-4 minutes, time to add the yummy twist, add kalakand (milk based sweet) and mix it well. That is it our Carrot Halwa with a  twist is ready. 



Notes: 
  • I mixed my kalakand with the halwa, but you can serve this as a layer. Add a layer of kalakand and then pour he halwa on top then garnish with dry fruits and  serve.
  • Adjust the sweetness according to your likes, no harm in trying other leftover sweets to make this halwa.
