Special Wheat Flour Kheer












This is one of the most unique dishes that i have ever tasted and i love the texture of the dish. I tasted it the first time during the Ganesh Chathurthi. my parents were in Bangalore and we were talking about the different sweet dishes they used to make and are no longer make. You might want to makea list like this too! 


So she came up with a really long list and i loved this one thing and i had to try it out!! Lucky that she remembered how to make it and we made it. Talking about how the dish is made, made me think, our elders were super creative and they invented amazing dishes with things that were easily available at home. That is what i love about festivals and festive dishes.



Festival is a time to forget that diet plan and dig in to the amazing dishes , meet people, eat together. This dish is a special for lord Ganesha, but absolutely nothing wrong in trying out the dish for Diwali. Your guests will LOVE it!!  And This is again  dish that you can customise as per your taste, no need of measuring scales or measuring cups, timers!!

The ingredients required are just 5 ingredients and is very easy to make!


  • Wheat flour mixed exactly like chapati dough. If done a night before then nothing like it! 
  • Milk is our next required ingredient! It is a kheer we are making and  no kheer is complete without milk. 
  • Sugar, We used the powdered sugar you can use any. The idea is to mix it well with the Milk, keep stirring if using regular or  powder the sugar and use. (any which ways is fine!) 
  • Dry fruits of your choice- fry them till golden brown in ghee and use as garnish. This is optional. It is festival time, so be generous to yourself! Plus nuts are good for health!! ;) 
  • Ghee to fry the Dry fruits 

How do we need to make the Kheer?

Step 1: Is to make dough, exactly like we make for roti, You can add milk while making it to enhance the flavor. We'll let it rest for 30 minutes and then punch it and mix it once again. Now make tiny balls with the flour.

Step 2: Is to add  ghee in a pan and fry dry fruits of your choice. Keep them aside and In the same pan fry the Wheat flour balls. Please do not hesitate to add more Ghee if you think it is not enough. We do not need to deep fry them, just enough to give these raw balls a crisp and crunch taste.




Step 3: Now we'll start the process of cooking our milk, I started with a bowl full and let it simmer and reduce to half. This is the only time consuming part of making the kheer but it is totally worth it. Once the milk is reduced to half, add desired amount of sugar and mix this well.

Step 4: Add the wheat flour balls and cook this for 8-10 min, Please keep a close watch on this and ensure the milk does not start to burn. I added the nuts to this milk, you can add them later. That is it!! our wheat flour Kheer is ready. Garnish with the dry fruits and serve!




Tip: let this cool down completely, then put it in the refrigerator and let it chill. before you serve!

Notes: 
I added my nuts and the Wheat flour balls one after another, you can add them later as garnish.
