Baingan Ka Bharta










Baingan ka bharta!! those people who don't like eggplant also will lick their fingers when they eat it. (Slurrrp!)  It is very easy to make a d a cook friendly dish, why i say cook friendly is because it is easy EASY to make and a super no fail recipe. The name wins half your battle and  the taste will be good assured! (*conditions apply! pun intended!)

This dish is so popular that if you type Baingan in Google, the first result is "Baingan ka bharta".  It is a smoked Eggplant dish that goes well with steamed rice with some melted ghee or you can serve it with some bread.  I LOVE the rice Combination! it is a super hit and i can finish my lunch just with this one item.

The Baingan ka bharta is the most easy dish you can make with baingan that looks exhotic! IF you have not tried it , i recommend you try it and add a twist of your own!

What do we need to make the Baingan ka bharta?
  • The big size Eggplant
  • Tomatos 
  • Onions 
  • Green peas 
  • Chopped Coriander 
  • Chopped Garlic 
  • Chopped Ginger 
  • Chopped green chilli
  • Pinch of hing
  • Garam Masala
  • Coriander powder
  • Cumin Powder 
  • Cumin seeds 
  • Oil 


How to make Baingan ka bharta?

Step 1:  is to roast actually burn the Eggplant. Just apply oil over the eggplant and toss it on the gas. Keep turning it to ensure it burns well.

Step 2: While the Eggplant / Baingan is resting, let us make the masala. Take a pan and add a little oil in it. Wait for the oil to heat and then add Cumin Seeds, fry them till they crackle and the amazing smell of the Cumin fills your kitchen. Add the Chopped garlic, ginger, green chillies and  fry till the raw smell of the garlic goes away.

Step 3: Add the chopped onions followed by some salt. Do you know why do we add salt when we fry Onions:  Always add salt when you fry onions, this helps in cooking the Onions Adding salt aids in the onions turning translucent / caramelise as the salt draws water from the onions and lets them cook in its own juice.

Step 4:  Once the Onions turn translucent add the tomatoes cook for a couple of minutes and then the green peas and cook for another 2 minutes. Now let us add the dry spices coriander powder and the cumin powder and the garam Masala. Now mix all of this well and leave this to cook on low flame, this will help in the dry spices oozing their  juices and mix with the vegetables. We will cook this till we see the oil separating from the tomatoes. 

Step 5: Peel the burnt layer of the eggplant and cut it up or mash it with your hands. Time to add it to the masala we just cooked and mix it well garnish with some fresh coriander and serve it with some hot steaming rice! 




Notes: 
1.Roasting / burning the eggplant is the most important part, do not skip this. 
2. I like the smoked feel for my bharta, that is why i add it to my masala right at the end. YOu can add it together with the tomatoes, followed by the spices and cook as well.
