Aloo da Paratha














Aloo Paratha! Just the name is enough to make you drool. If you are from india you know what i am saying and if you are a visitor or love Indian food then you have most definitely heard of the humble Aloo paratha. 



The Aloo Paratha is basically an Indian bread, it is a very very popular breakfast item in the north India. The stuffing is made up of mashed potatoes, onions and a few spices. It is then cooked on a Tawa (flat pan) with extremely generous helping of butter or ghee! Then it is served with more butter, mirchi achar, pickle simple masala curd or with some Besan ki chutney. Also served with a huge glass of lassi! or some masala buttermilk. 

It is very easy to make as there are no rules to it, i am sharing my process; But you can add your own touch to it. This is the most simplest and easiest of the paratha recipes.  


Let us see what we need to make Aloo paratha: 

  • Potatoes 
  • Chopped Green chillies 
  • Finely Chopped Onions 
  • Garam masala 
  • Salt
  • Chopped coriander
  • Dough (I used the wheat flour dough) 


How to make Aloo Paratha: 

Step 1: Is to boil , peel and mash the potatoes. Mash the potatoes well using a pav bhaji masher, add chopped onions, salt, garam masala, chopped coriander, chopped green chillies and mix this well. 

I like this masala potato stuffing mixture to be high on the spice, for me the blandness of the dough will balance the spice. Adjust the spice levels as per your taste. 






Step 2: Is to make the dough, mix flour, salt and ghee in a bowl and little water at a time and make smooth dough. Knead well and make equal sized smooth portions; Roll it out into circles with the help of a rolling pin. You can dust it with some wheat flour to avoid the circles sticking. 



Step 3: Make a small ball out of the Potato mixture we prepared and place it in the middle of your circle. Gently start folding the corners and cover the mixture and slowly roll the paratha. You might see some of the potato mixture coming out, that is fine, with practice you will learn to make the parathas perfectly. FOr the aloo paratha, mixture peaking out or not it will be a hit. 







Step 4: That is it, serve the paratha with an extra helping of butter dropped on top of it. Serve it with some besan ki chutney or mirchi achar or any achar.
