Step by Step - Chocolate and Maida burfi with 5 ingredients.





Maida and Chocolate Burfi! 

Ok, so this is (only) the second sweet dish on my blog, many many more to come. 

Except for chocolate (read plain Dairy Milk), i am not a big fan of sweets. Last week, I got some Khova all excited to make kulfi for the family, The khova went straight into my refrigerator and sat there looking at me nearing the date of expiry and I already made the awesome kulfi with the instant mix and a bit of my twist. I had this 200 gms of Khova screaming to be used. 

I wanted to make something that is really really easy. After a couple of discussions with MIL and her sister we I present to you the Chocolate maida burfi!  It is so easy to make, you will love it, requires very few easily available ingredients in your kitchen. This time i tried only one layer of burfi, will try the double layered burfi the next time and will update this post with the experience.


What do we need to make the Maida Chocolate Burfi. 

  • 1 cup Maida (All purpose Flour)
  • 1.5 cups Sugar 
  • 100gms Khova 
  • 2-3 TBS Chocolate powder 
  • 3/4th cup Ghee 
  • Water enough to make sugar syrup. 

How to make Chocolate and Maida Burfi?


Step 1 Is to melt the ghee and add the Maida to it, mix it well ensuring there are no lumps and cook for about 5 -8 minutes. keep stirring to ensure it does not burn or brown. Switch off and leave it to cool off. Refer to the image below for consistancy. 



Step 2: Is to add the khova and the Chocolate powder to this and mix it well and parallel to this let us start making the Sugar Syrup.

Now i added the Chocolate powder / i added drinking chocolate and it came out quite nice! 




Refer to this image for the consistency; do not worry about the thickness now, we will add it to the sugar syrup and can get to the spreadable consistancy.  


Sugar Syrup: This needs to be of a one string consistency. Be patient and be around always when you make the sugar syrup. Keep stirring to ensure it will not bun. No answering the phone, no answering the door!! Believe me  That can harm the syrup. I am thinking of posting a detailed post soon on the one string, because the first ever time (about 3 years ago, i made had to make it 4 times to get it right!). I poured water enough to drown the sugar. 






Step 3: Add the maida chocolate and khova mixture to the Sugar Syrup, (while the gas is still on). Keep mixing and folding, this is an extremely important step, so keep mixing and ensure there are no lumps, after mixing for 3-4 minutes, switch off the gas and continue to mix to get a nice spreadable consistency. 



It should be lump free because we took care of that earlier, any lumps that stayed on will melt in this process.  

Step 4 Mix this really well, it will bubble and those few lumps that got leftover will all melt. I am sharing a picture for you to understand the consistancy. 








Step 5 grease a plate and spread the mixture on it. spread it evenly and leave it to set for 10 minutes before you cut it into desired shape. Using a parchment sheet/ butter paper might help.  I did not try but no reason why it will not work. take them out after 30-40 minutes and They are ready to eat! 








Notes: 

  • If you do not have Chocolate powder at home, you can replace it with Bournvita.  
  • After you grease the Plate, put a butter paper and then spread your mixture. 
  • One String consistancy is when you lift the ladle that you are mixing the syrup, it does not drop as bits but as a string.
