Milagai/ Gun Powder / Idli, Dosa masala powder







If you walk into a darshini in South India and ask for a Dosa or for that matter an Idli, you get this platter with the main dish and it's multiple sides! Sambaar, Coconut Chutney, Tomato chutney and this amazing Milagai Podi/ Dosa Podi! The chutneys are amazing but i love this spice powder, i eat it with everything! even with Upma! or sometimes just with some hot steamed rice and some ghee (slurrrrrrp! Slurrrrrp). 


Not always you have the time to make so many things at home, then comes to your rescue! The Dosa Podi!! while making a yummy Tomato Chutney is not that difficult, the podi is always there as you live saver and it is awesome! also healthy as it is a  combination of many lentils! 

Milagai Podi/Dosa Podi emerges out of an amazing mixture of lentils which are lightly sauteed, filling their awesome aroma all over your home. This Powerful mixture is an absolute magical addition to Dosa and Idli lovers it enhanced the taste of the dish by 200% . I am a die hard fan of this particular mixture and do not miss any chance of having it. (i know i am saying this the 100th time already, but i am a FAN you see!) 

The combination of multiple lentils each having great benefits. My nephew who is just 3 years tells his mom, "Amma, can you make podi idli like how my friend's mom makes?" Such is the magic, this power packed spice powder is loved by all age groups. 

Every home in South India has their own recipe for the Milagai podi, most of the ingredients remain the same, just the proportions differ. I have tasted it in many places and i love this particular combination, do try it and let me know how you like this version. 


What do you  need to make the Milagai podi? 

  • 1 cup Urad daal 
  • 3/4th cup Chana daal.
  • Dried red chillies (equal to both the daals, you could add more or less) 
  • Salt as per taste 
  • 1 tsp Asafoetida

How to make Milagai Podi? 

Another one of my posts where it can be done in less than 15 minutes. The crux of the spice powder lies in how well you roast the lentils / red chillies. So just be patient and fry the lentils one after another!  After all you will not be making this powder everyday. You can make enough to sustain for 1 month, that way it says fresh and crisp. 

Step 1: In a wide pan add 1TSB Oil and roast the ingredients one by one. It is very important that we roast them separately, as they take different amount of time to get to that crisp stage we want. 

Step 2: add the required amount of salt a pinch of Hing (Asafoetida) and grind to a coarse powder. That is it, is this not simple? please do try it and let me know how you like it.  


Notes: You could add 1-2 TSB of Sesame seeds for a variation. I love it just like that.
