Pani Puri / Puchka / Gol gappa - With leftover chana

                                                         


Pani Puri / Gol Gappa / Puchka needs no introduction. Most popular of the chat items and easy to prepare.  Undoubtedly, it makes it to the top of "I cannot resist" Chat items!  Even though the main ingredients remain the same the taste of pani puri is differs based on location and all of them taste mouth watering Good!

This particular street food is so popular that it really does not need an introduction. Whichever part of India you are from, it would be available, might have a different name and my be there is a own touch. 



The recipe i am going to show needs us to prepare 3 things. 

1. Pani

2. Ragada
3. Puris - mine are store bought.

What do you nee to make Pani puri:



  • Mint leafs
  • Coriander leafs
  • Black salt
  • Salt
  • Green Chilies
  • Tamarind Juice. 
  • Finely chopped onions. 
  • Soaked Chick peas. (kabuli chana)
  • Asafoetida 
  • Red chilli Powder 
  • Turmeric powder


How to make Pani and Ragada: 


Step 1: Soak the tamarind in water for 30 min; ensure it has become nice and pulpy, keep aside. 



Step 2: make a smooth paste of the green chillies, Mint leaf, Coriander leaf, Salt, black salt. Dilute this by adding the tamarind water first and regular water as per your taste. 





Step 3: Chop up some onions and keep aside. 

Step 4: Lets make the Ragada. In a pressure pan add some oil; once the oil is hot add Jeera , soaked chick peas, red chilli powder, salt and the asafoetida. Let this cook for at least 5-6 whistles. Once done mash a few chick peas with the back of your ladle. That is it our Ragada is ready. 



Step 5: Is to keep all the ingredients close by and eat the pani puri!! break the puri on top to make a cup shape, add the ragada then the onions and finally fill it with the awesome mint paani you made and just gobble it up.
