Eggplant Pizza in less than 30 min.















Eggplant/ Baingan / Vankaya is the king of vegetables. It is a very good source of vitamin B1 and copper. The quality i love the most is it is low on calories. Not sure why it is called "Begun" (no-goodqualities/ not useful) in some parts of India. 


There will be very few people who do not like it. (Read NK , my husband). This eggplant pizza will ensure it gains more fans!! ( my husband for sure!).  How i tried this dish is a long story!!  My SIL chose to work from home and says she is hungry during chai time! we are all excited and open the fridge to see we have this nice looking bharte wala baingan or we have some frozen snacks that we could just fry. But remember!!! I am on this NO DEEP FRY diet..! So the frozen snacks option is out ..... then i remembered reading an awesome recipe that i wanted to try... The Egg plant Pizza! 

This has to be the most yummiest snack/ starter i have tried!! It is quick to make and requires very few ingredients. Let us make some yummmy eggplant pizza. 

What we will be doing is quite simple, this pizza uses no maida.. yes zero flour! Then you must be wondering how will we make the pizza?? Well the base of our mini pizza is the Eggplant itself!! WAIT...base is eggplant? how? let me show you how!! 

What do you need to make the Eggplant Pizza??

  • Eggplant / Baingan (the big one that we use to make Bharta) 
  • Garlic finely chopped 
  • Tomatoes finely chopped 
  • Capsicum finely chopped 
  • Black olives sliced. 
  • Butter 
  • Mozzarella Cheese
  • Amul Cheese (optional)
  • Salt 
  • Chili powder 
  • Olive oil 
  • Thyme
  • Mixed herbs 



How to make Eggplant Pizza?? 


Step 1: Let us make garlic sauce that we are going to use to roast the base of our pizza.  Take a pan and melt some butter add chopped garlic and some Thyme. Keep this aside, we are going to use this to coat the Eggplant slices when we roast them. 



Step 2: Lets make our topping; Ina  pan add some olive oil and saute vegetables of your choice (I used tomatoes and capsicum). add some salt and chili powder and let this cook for about 2-3 min, do not over cook them they will taste yummy with the crunch in them. Add some mozzarella cheese and sprinkle some mixed herbs. (Ah!! your kitchen will be smelling heavenly  now!!). The cheese will melt and that is when you know the topping is ready! 





Step 3: Almost there!! Slice up the Eggplant into roundels and place them on a  nice flat tawa / pan.  brush these with the garlic sauce we made and keep turning and ensure they cook well. Once you are satisfied add the yummy topping we made and leave it on the pan for  2-3 minutes. You could grate some extra cheese and garnish with some black olives. Your super yummy Eggplant pizza is ready!!
