Spicy Tomato rice with Leftover rice.




Tomato rice is my favorite one pot meal, as it requires less vegetable cutting and its quick and absolutely easy to make. It turns out better with leftover rice as the rice becomes a bit dry and is already separated. :D one more less thing to do.

Spice (Chilli) is the main taste of this tomato rice, You can obviously alter it to your taste.

What you need to make Spice  tomato Rice?

  • Leftover rice
  • Sliced tomato (one tomato more than the onions)
  • Sliced onions 
  • Sliced Capsicum 
  • Cubed Boiled potatoes (optional)
  • Chopped Coriander.(fresh)
  • Freshly made Ginger and Garlic Paste (generous amounts)
  • Salt
  • Pav Bhaji Masala 
  • Coriander Powder
  • Cumin Powder
  • Oil
  • Cumin Seeds 


How to make Spicy Tomato rice ??

Step 1 is to poke the leftover Steamed rice using a  fork, this will help in separating the cooked rice. Keep this aside.

Step 2 is to take a nice big wok and add generous amounts of oil, to this add the cumin seeds and fry till they roast nicely; add the freshly made ginger garlic paste and fry till the raw smell of it goes away. Lets add our sliced vegetables one by one,  first the Onions and fry them till they turn translucent (stat to Limp but do not brown); Add the sliced tomato and mix well, add the cubed boiled potatoes mix and leave it for 2 minutes.

Step 3  At this point lets add the dry spice powders, Cumin, Coriander,Pav Bhaji Masala, salt, chili powder. Mix and fry till the oil starts to separate.Add the capsicum and cook all this masala mixture.This should not take more than 3-4 minutes. Now add the rice and mix well. The big Wok we took helps us in mixing all the vegetables with the rice. Garnish with freshly chopped coriander and serve with some masala curd.
