Chinese Fried rice with Leftover Steamed rice

In on of my previous posts i showed you how to make yummy gold coins with leftover rice.

The Chinese fried rice actually turns out well when made with leftover rice, This veg fried rice is well spiced and colorful with a nice blend of vegetables. One thing you have to always remember when you make any Chinese dish is the size of your vegetables. They have to be chopped really fine, the size actually changes the taste of the dish.

I recommend you use normal rice for this and not Basmati.

What do you need to make the Chinese fried rice with left over rice:

  • Leftover steam Rice.
  • Finely chopped Spring Onion
  • Finely chopped Carrot
  • Finely chopped Beans
  • Finely chopped Capsicum
  • Salt (rock salt preferred
  • Pepper powder.
  • Oil

How to make Chinese Style fried rice?

In a big Wok and add generous amount of oil and fry the vegetables, add capsicum in the end this way it cooks but stays crisp. Sprinkle some salt and add a little soy sauce and mix well.  (salt enough for vegetables only).

While the vegetables are frying, poke your leftover rice with a fork and make sure the grains separate. Check your vegetables and once they are crisp add the rice. Now to the Wok add salt and pepper in the end and serve hot hot.

I love to eat this particular Fried rice just with some chilly garlic sauce.
